Posting only to a category

I want to be able to create a new post that only shows in the category that I want it published in. I don't want every new post to show on the main page. Is this possible?

Install the Start Page Category plugin and you can define which categories are shown on the front page.

I also think you can install the "Extended properties for entries" event plugin. It will offer you an option called "Hide from article overview / frontpage" for each individual post (so you have slightly more control over each post itself).
