First Category help

Sorry if this has been asked and posted, but if it has, please direct me to where I might find it....
If you have multiple categories, how do you get it to show the general (main) category and not the others when someone access the blog. Basically not to show all.
Right now, when you go on, you get all the categories (even though there are only two for testing). You can select the other category and it removes the general category with no problems, and then click on all categories and you get it all.
