how about...
hm..i'm thinking of text. i just did a backup using mysql queries.. copy one table content to another table in the archive dbase. But you noticed on phpmyadmin under the SQL query..you can choose to "Insert data from a textfile into table"
would that be easier for future serendipity installation?
So if something happen to the serendipity dbase.. and you had to do fresh install of serendipity... you still have that textfile backup and just dump the textfile to the new serendipity dbase.
I dunno i'm just rambling here. For some people they don't know sql...maybe this might be easier.
Serendipity already got the import from textfile function anyway.

Re: how about...
The textfile is in CSV format, and that's not a good structural choice.
SQL backup is always more compatible and better since it preserves all information. An export to plaintext would not really make sense, since SQL also contains plaintext with more features. Then again you can already export CSV by using phpMyAdmin, so I think this is not a Serendipity issue.
RSS/XML export is already quite nice IMHO as it preserves a logical blog-structure...
